Creamy Butterscotch Pudding for 2 Recipe
  • Prep: 10 min. Cook: 10 min. + chilling

Ingredients

  • 1/4 cup packed brown sugar
  • 1 tablespoon plus 1 teaspoon cornstarch
  • Dash salt
  • 1 cup fat-free milk
  • 1 egg yolk, lightly beaten
  • 1-1/2 teaspoons butter
  • 3/4 teaspoon vanilla extract

Directions

  • In a small saucepan, combine the brown sugar, cornstarch and salt. Add milk and egg yolk; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer or until thickened.
  • Remove from the heat; stir in butter and vanilla. Cool to room temperature, stirring several times. Pour into two individual dessert dishes. Cover and refrigerate for 1-2 hours or until chilled. Yield: 2 servings.

Nutritional Facts 1/2 cup equals 217 calories, 5 g fat (2 g saturated fat), 111 mg cholesterol, 157 mg sodium, 38 g carbohydrate, trace fiber, 5 g protein.

Recipe was very easy to make, however did lack vibrant flavor I wanted for buttersctoch. Was to mild in flavor for me.

I added 1 teaspoon corn starch, 1/2 cup butterscotch chips and omitted the butter.It is thicker and tastier.

Not enough of a "butterscotch" flavor as I would have liked. It did have a good flavor and was pretty easy to make with ingredients you typically have on hand. It was about the right size portion and I will probably make it again but, definitely if you are looking for a butterscotch flavor stick with the boxed stuff!!

Although this recipe was easy and creamy, I found the flavor bland. I much prefer the boxed butterscotch pudding for flavor. Perhaps this recipe would have more flavor if I had added butterscotch chips as another cook suggested.

I stirred in 1/3 c. butterscotch chips while

still warm, made it more "butterscotchy",

creamy and thick. Very yummy!

Delicious! I made it according to the recipe but instead of discarding the egg white, I whipped it with suger and vanilla, then topped off the pudding with it. A vanilla sugar cookie stuck upright into the whipped topping adds a fancy touch.

this is a great recipe for my husband and I. I sometimes top it with toffee bits to make it more festive,also use whole milk to make it richer
