Creamed Spinach Recipe

Ingredients

  • Cooking spray
  • 1 lb fresh spinach leaves, about 4 cups
  • 1/4 cup minced onion
  • 2 teaspoons trans fat free margarine
  • 2 tablespoons white all purpose flour
  • 1 cup whole milk
  • 1/4 cup sour cream
  • Pinch ground nutmeg
  • Pinch salt
  • Pinch black pepper

Directions

  • Lightly coat large pot with cooking spray.
  • Wash spinach under cool running water, but do not pat dry.
  • Place spinach in pot, cover and cook over medium 3 - 4 minutes, or until spinach begins to wilt.
  • Strain and discard extra liquid. Move spinach to serving dish.
  • In separate small pot, melt margarine. Add onion, cook 3-5 minutes.
  • Whisk in flour and cook over medium low 1 minute, whisking continually.
  • Whisk in milk, increase heat to medium, and bring to boil. Continue boiling, whisking continually 1 minute or until mixture is thick.
  • Remove from heat, whisk in sour cream.
  • Spoon sauce over spinach and sprinkle with nutmeg, salt, and pepper.
