Creamed Ham on Corn Bread

INGREDIENTS
- 1 package (8-1/2 ounces) corn bread/muffin mix
- 1 egg
- 1/3 cup milk
- CREAMED HAM:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground mustard
- 1/4 teaspoon salt
- 1-1/2 cups milk
- 3/4 cup shredded cheddar cheese
- 1-1/2 cups cubed fully cooked ham
DIRECTIONS
In a large bowl, combine the corn bread mix, egg and milk until blended. Spread into a greased 8-in. square baking pan. Bake at 400° for 18-20 minutes.
Meanwhile, in a saucepan, melt butter; stir in the flour, mustard and salt until smooth. Add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheese until melted. Add ham and heat through. Cut corn bread into squares; top with creamed ham. Yield: 6 servings.
