TIME: Prep: 30 min. + chilling

Ingredients:

  • 18 large fresh strawberries
  • 1 cup cold fat-free milk
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 2 cups reduced-fat whipped topping
  • 1/4 teaspoon almond extract

Directions:

Remove stems from strawberries; cut a deep X in the top of each berry. Spread berries apart.
    In a bowl, whisk milk and pudding mix for 2 minutes. Fold in whipped topping and almond extract. Pipe or spoon about 5 teaspoons into each berry. Chill until serving. Yield: 18 strawberries.

    I made these for a small party. Everyone loved them. I did use sugar free cheesecake instant pudding mix and fat free cool whip. Seemed to set up just fine. I added blue sprinkles for a red, white and blue look. Very delicious...am making again for fourth of july.

    A friend made these for Easter and we LOVE this delicious strawberry delight. We used 1 sm carton of heavy whipping cream to help the cream set up and used Jello's cheesecake instant pudding mix for a rich taste. We split each strawberry in half and decorated each 1/2 strawberry with the cream. We then took it a step further and drizzled a little bit of melted chocolate on the top of the cream. Very elegant and though it was not as low calorie, they were delicious and disappeared very quickly.
