Ingredients

  • 18 large fresh strawberries
  • 1 cup cold fat-free milk
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 2 cups reduced-fat whipped topping
  • 1/4 teaspoon almond extract

Directions

  • Remove stems from strawberries; cut a deep X in the top of each berry. Spread berries apart.
  • In a bowl, whisk milk and pudding mix for 2 minutes. Fold in whipped topping and almond extract. Pipe or spoon about 5 teaspoons into each berry. Chill until serving. Yield: 18 strawberries.

Nutritional Analysis: One filled strawberry equals 36 calories, 1 g fat (1 g saturated fat), 0.55 mg cholesterol, 73 mg sodium, 6 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchanges: 1/2 fruit.

Every year when strawberries come into season my family requests this recipe. My kids love to dip their strawberries into it.

These are so good! If you want to make the strawberries stand, take a tiny slice out of the bottom of the strawberry just as many people do with stuffed green peppers.

I made these for a small party. Everyone loved them. I did use sugar free cheesecake instant pudding mix and fat free cool whip. Seemed to set up just fine. I added blue sprinkles for a red, white and blue look. Very delicious...am making again for fourth of july.

A friend made these for Easter and we LOVE this delicious strawberry delight. We used 1 sm carton of heavy whipping cream to help the cream set up and used Jello's cheesecake instant pudding mix for a rich taste. We split each strawberry in half and decorated each 1/2 strawberry with the cream. We then took it a step further and drizzled a little bit of melted chocolate on the top of the cream. Very elegant and though it was not as low calorie, they were delicious and disappeared very quickly.
