Cranberry and Pecan Salad with Mint Dressing Recipe

Ingredients

  • Pinch black pepper
  • 2 small apples
  • 2 ounces fresh mint, 10 leaves
  • 1-1/2 teaspoons fresh dill weed
  • 1/8 teaspoons ground thyme
  • 2 fresh basil leaves
  • 2 tablespoons mayonnaise
  • 1-1/2 tablespoons olive oil
  • 1-1/2 teaspoons white wine vinegar
  • 1/4 teaspoons horseradish
  • 1/4 teaspoons Worcestershire sauce
  • 1/8 teaspoons garlic powder
  • Pinch salt
  • 1 cup fresh chives
  • 2 heads bibb lettuce, torn into bite size pieces
  • 1/3 cup dried cranberries
  • 1/4 cup chopped pecans

Directions

  • To make dressing, peel, core, and chop 1 apple. Place in blender with mint, dill, thyme and basil. Process until finely chopped.
  • Add mayonnaise, oil, vinegar, horseradish, Worcestershire sauce, garlic powder, salt, and pepper. Process until smooth.
  • Add chives and briefly process.
  • On 6 individual serving plates, divide lettuce, cranberries, and pecans evenly. Chop and evenly divide remaining apple.
  • Top with dressing, serve.
