Nuts are a wonderful source of protein and nutrition so I look for ways to add them to all of my dishes. The addition of cranberries in this recipe makes it perfect for fall.—Dawn Bryant, Thedford, Nebraska

Tip

Pine Nuts

Also know as pignolia or pinon, the pine nut is the small seed from one of several pine tree varieties. They are small elongated ivory-colored nuts measuring about 3/8 inch long and having a soft texture and a buttery flavor. Frequently used in Italian dishes and sauces such as pesto, pine nuts are often toasted to enhance their flavor.

This was a really delicious side dish I made for Christmas. My sister-in-law is gluten free, and I am always looking for recipes she can enjoy. The combination of ingredients were very good, and easy to put together.

I love the flavors in this dish. I made it with a wild rice blend rather than just wild rice.
