Cranberry Scones Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/4 cup cold butter
  • 3 tablespoons 2% milk
  • 1 egg, beaten
  • 1/4 cup dried cranberries
  • 1/4 teaspoon coarse sugar

Directions

  • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine milk and 2 tablespoons beaten egg; add to crumb mixture just until moistened. Stir in cranberries.
  • Turn onto a floured surface; knead gently 6-8 times. Pat into a 6-in. circle. Cut into four wedges. Separate wedges and place on a baking sheet coated with cooking spray. Brush with remaining egg; sprinkle with coarse sugar.
  • Bake at 425° for 12-15 minutes or until golden brown. Serve warm. Yield: 4 scones.

So delicious! As good as the scones at an English cream tea!

I made these scones in honor of the newest season of Downton Abbey. My son is a college educated chef and he told me to save this recipe. That is a big compliment coming from a chef. I made the recipe as stated. I may tweak it a bit at a later date, but it was great as it written.

I already wrote a review, but I wanted to share that I double the recipe. I add one whole egg to the scones and a little more flour if needed along with the white chocolate chips. I brush egg white on the outside. These are so easy and a favorite!

These scones are super flakey and delicious. I added a few dark cholcolate chips to mimick the ones I get at an expensive pastery/coffe shop...these are even better, warm, buttery and not too sweet. And this recipe makes just a few so MAYBE I won't be as tempted to over indulge.
