Cranberry Rice Dessert Recipe

Ingredients

  • 1/4 cup dried cranberries
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon butter, melted
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 1 cup cooked long grain rice

Directions

  • In a bowl, combine the cranberries, orange juice, honey, butter, salt and cinnamon. Stir in the rice. Transfer to a greased 1-1/2 cup microwave-safe dish. Cover and microwave on high for 1 to 1-1/2 minutes or until heated through. Stir mixture before serving. Yield: 2 servings.

Editor's Note: This recipe was tested in a 1,100-watt microwave.
