Cranberry Fudge Recipe
  • Prep: 20 min. + chilling
  • Yield: 81 Servings

Ingredients

  • 2 cups (12 ounces) semisweet chocolate chips
  • 1/4 cup light corn syrup
  • 1/2 cup confectioners' sugar
  • 1/4 cup reduced-fat evaporated milk
  • 1 teaspoon vanilla extract
  • 1 package (5 ounces) dried cranberries
  • 1/3 cup chopped walnuts

Directions

  • Line a 9-in. square pan with foil. Coat the foil with cooking spray; set aside.
  • In a heavy saucepan, combine chocolate chips and corn syrup. Cook and stir over low heat until smooth. Remove from the heat. Stir in the confectioners' sugar, milk and vanilla. Beat with a wooden spoon until thickened and glossy, about 5 minutes. Stir in cranberries and walnuts. Spread into prepared pan; refrigerate until firm.
  • Using foil, lift fudge out of pan; discard foil. Cut fudge into 1-in. squares. Store in an airtight container in the refrigerator. Yield: 1-1/3 pounds (81 pieces).

Nutritional Facts 1 piece equals 36 calories, 2 g fat (1 g saturated fat), trace cholesterol, 3 mg sodium, 6 g carbohydrate, trace fiber, trace protein. Diabetic Exchange: 1/2 starch.

I made this during the Christmas holidays with both cranberries and dried cherries. Both were a hit! I took a batch to work and everybody raved over them and got several requests for the recipe. I will try the recipe next with white chocolate chips

I don't usually make fudge, but this sounded too easy and delicious to pass up! It's really good! I use dried cranberries and no-fat evaporated milk, so it should be even lower in fat. No guilt with eating this fudge! I only had a 8x8 square pan,so I ended up with less pieces.I will be making this every Christmas!

My 3 1/2 yr old son and almost 5 yr old daughter helped me make this. We used fat free evap. milk. It was awesome! Thank-you so much. We got 96 servings in our dish, though. Yum, YUM!

great,an simple recipe.one of the best i've tried from this site. i sub'ed pecans for the walnuts and had to make a second batch to hide. the first batch went way to FAST

I made this and packaged for our Christmas bags at my Red Hatters meeting. I also made some and took for all to sample. Everyone just loved it. They like the tart cranberry mixed with the sweet chocolate. I would say this is a recipe to keep.

The Fudge was soft, and never harden up enough to really enjoy. Premeasured all ingredients first, mixed until my arm was going to fall off and it never did harden up. Diffently would not make again !!Waste of time and money.

It turned out great and firmed up just fine. I did measure out all of my ingredients first so that there would be no delay in between steps. I also put in a full cup of walnuts. Absolutely delicious!

Well still not sure what I did wrong but the fudge never set.. so instead of throwing it all away I melted a bag of semi-sweet chips with a tbsp of shortening in a double boiler. I used a spoon to scoup out the fudge and rolled into balls and dipped them in the melted choc. Put them in the refrigerator to harden and had the best tasting new creation. Even served them at our neighborhood get together and had many that wanted the recipe!

This was a great idea that I simplified even more. 6 oz of semi sweet chocolate chips, melted, 1 tub of dark chocolate fudge frosting added to that and then the cranberries and walnuts. Pour into an 8x8 pan, lined with foil and pop in the frig for 2 hours, minimum. Remove, pull out of pan with foil and cut into bite size pieces. YUM!

I made the cranberry fudge using soy creamer, it turned out very good. I have a child who has a sever allergy to all dairy products. So I was able to use soy creamer in place of the evaporated milk. Thanks for the recipe. Some recipes don't do well when you use substitutes. It was a hit.

This is just the greatest! After melting the chocolate chips, I did not need to beat the mixture for five minutes. Just a few turns of the spoon! I have shared this with neighbors and they agree as to how good it is. Thanks for submitting the recipe.

I love it! I actually took out the cranberries and put in marshmellows they melted a bit but were great like rocky road. And I threw a few on top to make them look more festive.

When I made this recipe I used cashews, which my family prefer, instead of walnuts, and the result was so well received. I made several batches and all could not get enough of it. It was so easy to make. This is definitely a keeper.

I've never been much of a candy maker, but this was easy. I used more walnuts and substituted dried cherries and it is good. I also used the tip of cutting it with a pizza cutter which is a great tip!

I made this before seeing the recipe! I used the Kraft "Fantasy Fudge" recipe (I use a bag of small marshmallows instead of the marshmallow cream though). I put dried cranberries and chopped pecans. Wonderful! I made to give some away - I have to make more because my family ate it all!

Actually, if a person cut 1-in squares (meaning 1 x 1 in.) in a 9x9 pan (9 x 9 = 81), that person really would get 81 servings (if each piece was a serving)! I can't wait to try these!
