Cran-Apple Waldorf Salad Recipe

Ingredients

  • 1 medium apple, chopped
  • 1 celery rib, chopped
  • 1/2 cup dried cranberries
  • 1/3 cup mayonnaise
  • 1 tablespoon sugar
  • 2 teaspoons lemon juice

Directions

  • In a serving bowl, combine the apple, celery and cranberries. In a small bowl, combine mayonnaise, sugar and lemon juice. Pour over apple mixture and toss gently to coat. Yield: 2 servings.

Nutritional Analysis: One 1-cup serving (prepared with fat-free mayonnaise) equals 186 calories, trace fat (trace saturated fat), 0 cholesterol, 295 mg sodium, 48 g carbohydrate, 5 g fiber, trace protein.

This fresh-tasting salad is definitely worth trying. I added blueberries and chopped nuts for extra color and crunch. An easy and nice change from tossed salads.
