Crabmeat Quiche Recipe

Ingredients

  • 3 eggs
  • 2 egg whites
  • 1 cup half & half
  • 1 tablespoon fresh tarragon, chopped, optional
  • 1/2 teaspoons salt, to taste, optional
  • 1/8 teaspoons hot red pepper flakes
  • 1/2 cup shredded Swiss or mozzarella cheese
  • 1 frozen 9-inch pie crust
  • 8 ounces cooked crab, picked over to remove shells
  • Pinch fresh tarragon, optional
  • Pinch paprika, optional

Directions

  • Preheat oven to 325°F.
  • In large bowl, whisk eggs, egg whites, half and half, tarragon, salt, and ground red pepper until well blended.
  • Add cheese, whisk.
  • Place pie shell on baking sheet. Arrange crabmeat in bottom of pie shell. Pour egg mixture on top.
  • Bake until set and toothpick inserted in the center comes out clean, 40 to 45 minutes.
  • Let cool, then if desired garnish with paprika and sprig of tarragon.
