Cornish Hens with Thai Relish Recipe

Ingredients

  • 1 lb cornish game hen, without skin, cut in half lengthwise
  • 3 garlic cloves, minced, divided
  • 1/2 teaspoons ground ginger
  • Pinch black pepper
  • 2 tablespoons minced red onion
  • 2 tablespoons minced fresh peppermint
  • 2 tablespoons minced cilantro
  • 1 jalapeno pepper, minced
  • 2 teaspoons packed light brown sugar
  • 2 teaspoons fresh lemon peel
  • 1/2 tablespoons minced fresh gingerroot
  • 1-1/2 tablespoons low sodium soy sauce
  • 2 tablespoons fresh lemon juice

Directions

  • Preheat grill to medium. Rinse hen, pat dry, and remove all noticeable fat.
  • In small bowl, mix 1 minced garlic clove, ginger, and pepper. Cover hen with garlic mixture.
  • Grill hen halves for about 25 to 30 minutes or until the meat in the center is no longer pink. Turn hen halves every 5 minutes.
  • In blender, finely mince onion, cilantro, mint, chili pepper, brown sugar, lemon zest, 2 minced garlic cloves, ginger, soy sauce, and lemon juice.
  • Place hens on serving plates and garnish with relish.
