Corn Fritter Patties Recipe

Ingredients

  • 1 cup pancake mix
  • 1 egg, lightly beaten
  • 1/4 cup plus 2 tablespoons 2% milk
  • 1 can (7 ounces) whole kernel corn, drained
  • 2 cups canola oil

Directions

  • In a small bowl, combine the pancake mix, egg and milk just until moistened. Stir in the corn.
  • In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop batter by 1/4 cupfuls into oil; press lightly to flatten. Cook for 2 minutes on each side or until golden brown. Yield: 7 patties.

Nutritional Facts 1 serving (1 each) equals 645 calories, 64 g fat (8 g saturated fat), 32 mg cholesterol, 302 mg sodium, 16 g carbohydrate, 1 g fiber, 3 g protein.

Fry them in a frying pan with very little oil.

I really liked this recipe and will use it again, but the next time I will double the corn. It is a real good substitute for Native American frybread.
