From Holyoke, Massachusetts, Barbara Bernard writes, "After my children left home, I found it difficult to whittle down meals for two, but I eventually succeeded, and this became one of our favorites. You can easily freeze the extra portion if your cooking for one."

I am writing this after making this recipe for about the 5th time and loving it each time. It is quick, easy, fast and made with ingredients always at hand. The combination of tomato, lemon juice, hot pepper sauce and mayonnaise create a different, interesting blend of tastes. It really works for me when I've been sewing all day and not given much thought to dinner. The quantity is perfect for us because my husband only likes leftovers that have been hiding in the freezer for awhile!

When I first made this recipe I didn't think it was the greatest in the world. Then when I had the leftovers I thought it tasted MUCH better. I will make again but may add some more seasoning to it it is a little bland for my taste. It was quick and easy to make though.
