Cordon Bleu Recipe

Ingredients

  • 6 boneless skinless chicken breasts, 4 ounces each
  • 4 ounces shredded Swiss cheese
  • 3 ounces sliced, smoked ham
  • 1 cup white whole wheat flour
  • 2 egg whites, beaten
  • 1/3 cup bread crumbs
  • Cooking spray

Directions

  • Preheat oven to 35°F.
  • Pound chicken breasts with flat side of meat mallet, until very thin and even in thickness.
  • Layer ham and cheese on chicken breasts, cutting to fit.
  • Roll pieces of chicken and secure with toothpicks.
  • Dredge chicken rolls through flour, dip in egg whites. Coat with bread crumbs.
  • Coat rolls generously with cooking spray. Cook in skillet over medium heat until browned on all sides, 8 to 10 minutes.
  • Remove chicken from skillet to baking pan.
  • Bake, uncovered, 30 minutes, until thoroughly cooked.
