Cool Lime Salad Recipe
  • Prep: 20 min. + chilling

Ingredients

  • 1/2 cup undrained canned DOLE® Crushed Pineapple in 100% Pineapple Juice
  • 2 tablespoons lime gelatin
  • 1/4 cup 4% cottage cheese
  • 1/4 cup whipped topping

Directions

  • In a small saucepan, bring pineapple to a boil. Remove from the heat and stir in gelatin until dissolved. Cool to room temperature. Stir in cottage cheese and whipped topping. Chill until set. Yield: 1 serving.

Nutritional Facts 1 serving (1 each) equals 312 calories, 6 g fat (5 g saturated fat), 13 mg cholesterol, 266 mg sodium, 57 g carbohydrate, 1 g fiber, 10 g protein.

I made this recipe years ago when I got this issue of Taste of Home for myself, and now I make it for my kids. They won't eat cottage cheese alone but they don't even notice it in the salad. I up the recipe to make a larger amount and it is worth it.
