Cookie Dough Brownies Recipe
  • Prep: 20 min. + chilling Bake: 30 min. + cooling

Ingredients

  • 4 eggs
  • 1 cup canola oil
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts, optional
  • FILLING:
  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup sugar
  • 2 tablespoons 2% milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • GLAZE:
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1 tablespoon shortening
  • 3/4 cup chopped walnuts

Directions

  • In a large bowl, beat the eggs, oil, sugar and vanilla until well blended. Combine the flour, cocoa and salt; gradually beat into egg mixture. Stir in walnuts if desired.
  • Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 30 minutes or until brownies test done. Cool completely.
  • For filling, in a large bowl, cream butter and sugars until light and fluffy. Beat in milk and vanilla. Gradually beat in flour. Spread over the brownies; chill until firm.
  • For glaze, in a microwave, melt chocolate chips and shortening; stir until smooth. Spread over filling. Immediately sprinkle with nuts, pressing down slightly. Let stand until set. Yield: 3 dozen.

Nutritional Facts 1 serving (1 each) equals 221 calories, 13 g fat (4 g saturated fat), 31 mg cholesterol, 68 mg sodium, 26 g carbohydrate, 1 g fiber, 3 g protein.

Substitute for Nuts

If your family loves the crunch of nuts in brownies and chocolate chip cookies, but someone is allergic to them, add granola or crisp rice cereal in the same amounts as the nuts called for in your recipes. But, always check the granola or cereal packages for nut allergy alerts to be certain.

Love these! The brownie part is moist and soft, just don't overbake! If you do the toothpick test, test the sides. The center should be fudgey so crumbles on the toothpick are fine! Also, instead of cooling the brownies and doing another chocolate layer, I like to just sprinkle mini chocolate chips on top! It's super easy and looks fantastic!

A hit with everyone in my family, but I would like a softer, fudgier brownie layer. May play around with that part a bit, but overall, a great recipe!

Fantastic idea but the brownie layer themselves are nothing special. You'd never use the brownie recipe by itself, so next time I'll make brownies I LOVE and then layer the same cookie dough recipe on top. I added chocolate chips in the dough to make it seem like choco chip cookie dough. Great idea though and took them to a potlock and everyone loved them, just like I said, not the greatest base brownie recipe--I like them richer and gooier.

I haven't made this recipe in a couple of years, but it one of my absolute favorites. My sister made these for me the first time I had them and they became a fav... I have made them for parties and office potlucks and they are the first to go... The cookie dough filling is so wonderful that now my sister and I have taken to doubling it for some extra goodness... Actually I think I may make these tomorrow...

I love this! I have been making this recipe since high school and everyone loves it everytime I make it. If you follow the directions correctly, they will turn out wonderfully!

I have always used the recipe out of the original magazine, but couldn't find it so I came on line...I was SHOCKED to see anyone DISLIKED this!! My children have ALWAYS loved this recipe...as well as anyone I've made this for! The cookie dough portion is delicious and you don't have to worry about raw eggs...the kids have talked about using it to make home made cookie dough ice cream!! Follow the directions and it is amazing!!

These brownies are great! I have been making them for years and everybody always loves them. I don't know how these could get a bad reveiw. If you overcook these they will get dry so pull them out when it says to even if you don't think they are done they probably are. If you follow the receipe, you can't go wrong! YUM!
