Confetti Summer Salad Recipe

Ingredients

  • 1/2 medium zucchini
  • 1 large yellow bell peppers, cut into thin strips
  • 1 medium red bell peppers, cut into thin strips
  • 2 fresh green onions, sliced
  • 16 ounces frozen white shoepeg corn, thawed, and well drained
  • 2 fresh tomatoes, seeded, diced
  • 1/2 cup Italian salad dressing
  • 1/2 cup hot salsa
  • 8 ounces finely chopped kale

Directions

  • Slice zucchini in half lengthwise and cut into 1/4-inch slices.
  • In large bowl, combine zucchini, peppers, onions, corn, tomatoes, salad dressing, and salsa.
  • Cover tightly, chill 4 - 24 hours, stirring occasionally. Serve on thin bed of the chopped kale.

Nutritional Facts 1 serving equals 135 calories, 5 g fat (1 g saturated fat), 313 mg sodium, 20 g carbohydrate, 4 g protein. Diabetic Exchanges: 1-1/2 vegetable, 3/4 starch, 3/4 fat.
