Sweet Raspberry Goulash

This was something I created for my family one night. I'm notorious at our house for coming up with all kinds of concoctions. But I think this has been my best one yet. My dad loved it so much that he immediately asked for the recipe! I don't remember him ever doing that before with something I cooked. My 9 year-old daughter, who tends to be a picky eater at times, loves it, too. And, my husband and I enjoyed it as well.

Ingredients

1 – 18 oz. bottle Sweet Baby Ray’s ® Raspberry Chipotle BBQ Sauce (can be found at Walmart Super Center® or Kroger®)

2 lbs. Ground turkey meat (or any other type of ground meat; but turkey tastes best, and it's healthier)

2 bags "boil-in-bag" instant rice

1/3 cup dehydrated onions (may substitute with regular onions, adjust measurement accordingly)

1/3 cup dehydrated red and green bell peppers (may substitute with regular peppers, adjust measurement accordingly)

2 15.25 oz. cans of black beans (drained)

Directions

1. In a large, nonstick pot, brown the ground turkey meat, drain.

2. Prepare rice according to package directions, but cook for 20 minutes instead of 10.

3. While waiting for the rice to cook, combine the turkey, BBQ sauce, onions, bell peppers, and black beans. The reason for doing this while waiting for the rice, is so the onions and peppers will have time to re-hydrate.

4. Mix well.

5. Once rice is cooked, drain the rice and add to turkey meat mixture.

6. Mix well. Serve while hot. Serves 6.
