Star's Homemade Fudge

Ingredients

  • 4 cups sugar
  • 12 oz can evaporated milk
  • 18 oz bag chocolate chips (3 cups or 1 12 oz pkg and 1 6 oz pkg)
  • 1 lb butter (that's right!-FOUR sticks)-use the real stuff and cut in one inch pieces. 1 Tbsp vanilla
  • Chopped walnuts if desired (1/2 to 1 cup)

Directions

  • irst, line a 9x13 glass pan completetly with foil, leaving enough
  • hanging over the ends so that you can "scrunch" it up to make
  • handles to lift the fudge out with after it's set up. Use a couple
  • of Tbsp of soft butter and completely butter the foil. Set aside.
  • Second, cut the lb of butter into one inch pieces and put it, the
  • chocolate chips, and the vanilla into a large mixing bowl and set
  • aside.
  • Third, over a medium high heat, bring sugar and evaporated milk to a
  • rapid boil in a LARGE pot (it can boil up pretty high). Turn heat
  • down to medium, and boil for 9 minutes exactly, stirring constantly.
  • Set the timer as soon as it starts boiling and time it from there.
  • Do not stop stirring it. It should be a gently rolling boil. When
  • timer goes off, immediately remove from heat and pour mixture over
  • the chocolate chips, butter and vanilla in the mixing bowl. Stir it
  • up well, the butter and chocolate chips will start melting as you
