Skillet Lasagna

This has all the flavor of traditional lasagna but faster and lower fat.6 ServingsPrep: 10 min. Cook: 20 min.
Ingredients
- 8 ounces reduced fat ground sausage
1/2 cup chopped onion
2 cups bottled spaghetti sauce
1 cup water
2 cups dried wide egg noodles
1/2 cups coursely chipped zucchini
1/2 cup fat free ricotta cheese
2 Tablespoons grated parmesan cheese
1 tablespoon snipped fresh parsley or 1/2 teaspoon dry parsley flakes
1/2 cup shredded reduced fat mazzarella cheese (2 ounces)
Directions
- In a large skillet cook sausage and onion until sausage is done.
- Drain fat. Stif in spaghetti sauce and water. Bring to a boil.
- Stir in uncooked noodles and zucchini. Return to boil and reduce
- heat to medium low. Cover and simmer about 12 minutes or until
- noodles are done. Stif occasionally.
- Stir together ricotta dn parmesan. Add parsley. Drop cheese mixture
- into 6 mounds over the sausage-noodle mixture. Sprinkle with
- Mozzarella cheese. Cook on low 4-5 minutes until cheese is melted.
- Let stand 5 minutes before serving. Yield: serves 6
