This is an old family recipe that I loved as a child. As it has been handed down through the generations, each person changes it and makes it their own.

Ingredients

• 1 fryer chicken, cubed
• 1 cup flour
• 1 Tbsp. salt
• 1/2 tsp. pepper
• 1/2 cup oil
• 2 cups water
• 2 Tbsp. cornstarch
• 1/4 cup cold water
• 1Tbsp. curry powder
• boiled rice

Toppings

• crumbled bacon
• flaked coconut
• chopped peanuts
• boiled eggs, separated
• sea salt
• peach mango chutney

Directions

1. Coat cubed chicken with flour, salt, and pepper.
2. Brown in oil.
3. Add 2 cups of water and steam for 30 minutes.
4. Mix corn starch with cold water.
5. Add to chicken to thicken sauce.
6. Stir in curry powder.
7. Serve over rice with toppings.
