Saucy Peach Chicken

Ingredients
- 4 chicken breast halves (4 oz each) 1/2 tsp Salt
1/8 tsp. pepper 1 tsp. canola
Sauce
2 T. brown sugar 1 T. cornstarch
1/2 tsp. dried basil 15 oz reduced sugar
1 T. cider vinegar peaches
1 T. reduced sodium soy sauce 2 cups cooked rice
Directions
- Sprinkle chicken with s/p. Brown in oil in non-stick skillet over med
- high heat 5-6 min. until juices run clean. Meanwhile, in small bowl,
- combine the brown sugar, constarch and basil. Drain peaches,
- reserving syrup in a measuring cup; add enough water to measure 1
- cup. Set peaches aside. Stir the syrup mixture , vinegar, and
- soysauce and add to pan. Bring to boil; cook and stir for 2 min.
- until thickened. Return chicken to pan. Add peaches, heat through.
- Serve with rice. Yield: serves 4
