Refried Bean Dip

I cannot tell you how good this stuff is. It is a favorite of my entire family and everyone I work with. In fact, Leisa requested this for our Christmas Dinner at work instead of something more traditional. In addition to being a "party" food, I sometimes have it for dinner, :). It smells SO good when baking it will make your tummy rumble. Much better than the cold versions of this dip.

Ingredients

  • 2 cans refried beans
  • 16 0z jar Salsa
  • 8 oz Sour Cream
  • 12 to 16 oz of shredded cheddar cheese
  • Chopped tomatoes
  • Shredded lettuce
  • Chopped onions
  • Sliced olives

Directions

  • Spread refried beans in the bottom of a 9 x 13 glass casserole. Pour
  • Salsa on top of beans and spread to cover. Spoon Sour Cream on top
  • of Salsa and spread to cover. Sprinkle Cheddar cheese on top of sour
  • cream. Bake at 350 degrees for 45 minutes.
  • Keep warm until serving time. If taking to a potluck, top with
  • veggies just before serving, and let everyone dip their own out.
  • Looks really pretty. Serve with tortilla chips (we like Scoops) for
  • dipping. If serving at home, I spoon into individual bowls and then
  • top with the veggies, with chips on the side, so that I can
  • refrigerate the leftovers without the veggies so that it can be
  • warmed up again.
  • Yield: serves 0
