This is my Favorite Pea Soup recipe since you do not have to soak the peas overnight.When I want Pea soup I do not like to wait that long so this was a bonus to me.

   OLD FASHIONED HAM BONE SOUP
   To one pound of green split peas add 2 quarts of water (8 cups)Bring to a boil and boil 2 minutes.Set pan aside to soak for 1 Hour.DO NOT DRAIN.
   
   Add a meaty Ham Bone(or recipe says 1 0r 2 Smoked Ham hocks..I have never done that)
   If desired you can add a little carrot and/or chopped onion at this stage.Cover pan .Simmer about 3 hours stirring occasionally.
   Check because it sometimes takes less time or you may want a little more water midway thru cooking.
   Remove bone Cut pieces of diced ham from bone and add to soup. Season with salt and pepper. Heat to desired temp.
   
   Top with Garlic Croutons and shredded cheddar if desired
