Meatless Lasagna

 Meatless Lasagna
Growing up, one of my best friends was a vegetarian. This was our favorite recipe to make when we had movie night at her house. The cream cheese adds an extra kick of flavor that even the meat eaters in my family are satisfied by!

Ingredients

  • 8 lasagna noodles
  • cooked and drained 16 oz cottage cheese
  • separated 8 oz cream cheese
  • softened 16 oz mozerella
  • shredded 2 eggs 1/4 tsp. parsley 1 tsp. basil 1 jar spaghetti sauce

Directions

  • Preheat oven to 375-degrees F. In a bowl, combine cottage cheese,
  • cream cheese, all but 1 cup of mozzarella, eggs, parsley and basil;
  • stir together until mixture is uniform. In an ungreased 9-inch by
  • 13-inch pan, spread spaghetti sauce in pan to cover the bottom;
  • layer with four lasagna noodles, half the cheese mixture and half
  • the remaining sauce. Repeat layers. Bake uncovered for 45 minutes.
  • Top with remaining cup of mozzarella cheese and bake 5 additional
  • minutes. Remove lasagna from oven and let sit 5 minutes before
  • serving. Yield: serves 12
Wine: Full-Bodied Red Wine: Enjoy this recipe with a full-bodied red wine such as Cabernet Sauvignon, Merlot or Syrah.
