Maple-Pumpkin Creme Brulee

This is such a great twist to creme brulee, an efficient way to use your halloween pumkin, and wonderful alternative to pumpkin pie at Thanksgiving.

Ingredients

½ cup pumpkin puree
¼ cup lightly packed brown sugar
1 tsp. cinnamon
½ tsp nutmeg
½ tsp ground cloves
¼ cup maple syrup
4 egg yolks
2 whole eggs
2 cups 35% whipping cream
6 tbsp granulated sugar

Directions

Heat the maple syrup and cream over medium-low heat until bubbles begin to surface. In a bowl whisk together the remaining ingredients. Slowly mix in the hot maple syrup and cream mixture into the same bowl as the other ingredients. Pour ½ a cup of the mixture into 5 oz. ramekins. Place the ramekins into a baking dish that is at least 2” deep. Add water to the baking dish until the water reaches half way up the ramekins. Preheat oven to 325° F. Place baking dish into the oven and bake for approx 20 mins., or until mixture no longer quivers in the centre. Remove from oven and let stand until they reach room temperature, then place in fridge to chill, approx. 1 hour. Before serving, sprinkle 1 tbsp of sugar overtop of the custard. Using a kitchen torch, heat the sugar until melted and golden. Serve.
