Carrot Cake

I've used this recipe for over 20 years, and it is still my most requested. Even most people that say they don't like Carrot Cake like this one. It's quick, easy, and by baking in a 15"x11" pan, it travels much easier than the usual layered version.0 ServingsPrep: 30 min. Cook: 35 min.
Ingredients
- 3 cups grated carrots (1#)
2 cups sugar
1 1/2 cups salad oil
4 whole eggs
3 teaspoons cinnamon
1 teaspoon salt
2 teaspoons baking soda
1 tablespoon vanilla
2 cups flour
Icing:
8 oz cream cheese
1/2 cup margarine/butter
1 teaspoon vanilla
1 pound powdered sugar
1/2 cups chopped nuts
cinnamon to taste optional
Directions
- Mix cake ingredients well and bake in a 15"x11" pan for 35-40 minutes
- until toothpick comes out clean. Cool.
- For icing, beat cream cheese and butter until smooth. Add vanilla,
- then gradually add powdered sugar. Fold in chopped nuts. Spread on
