My husband had to be put on a Heart Healthy diet. Fish was on our menu 3 times a week. I had to get creative with our fish recipes. We love this one.

Ingredients

1 Tablespoon Butter
4 Swai Fillets, 6 or 8 ounces each, rinced and thawed
3 Tablespoons Olive Oil, divided
1 Tablespoon of Cajun Spice - Your choice of brands
2 Cup Plain Bread Crumbs

Directions

1. Preheat oven to 350°F.
2. Lightly Oil a 13"x9"x2" baking dish. Cover bottom of pan with the 1 Tablespoons of butter.
3. Brush Swai fillets on both sides with olive oil.
4. Mix togther breadcrumbs and cajun spice in a mixing bowl.
5. Coat both sides of fillets with breadcrumbs and cajun mix. Arrange fillets in prepared pan.
6. Drizzle 1 teaspoon olive oil over each. Bake until fillets are cooked through, about 12-15 minutes.
7.Turn oven to broil. Broil fish until crust is golden, watching closely to avoid burning, about 2 minutes.
