Berry Delicious Rhubarb Crisp

I have seen dozens of rhubarb crisp recipes but none of the appealed to me. I think rhubarb is an aquired taste. So my thought was to combine the soury rhubarb with sweet berries - my favorites - strawberries and blackberries. The results are a mouthful of berry joy!6 ServingsPrep: 20 min. Cook: 60 min.
Ingredients
- 1 cup flour
¾ cup oatmeal
1 cup brown sugar
½ cup melted butter
1 tsp vanilla
1 teaspoon cinnamon
1 1/2 cups diced rhubarb
1 1/2 cups sliced strawberries (stems removed)
1 1/2 cups fresh blackberries
1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla
Directions
- Mix first 5 ingredients until crumbly. Press half of the mixture in a
- 9" square baking pan. Cover with the rhubarb, strawberries and
- blackberries. Combine sugar, cornstarch, water and vanilla in a
- medium size saucepan. Bring to a boil then quickly reduce to a
- simmer until the sugar is dissolved and the liquid is clear. Pour
- mixture of the rhubarb and top with remaining crumb mixture. Bake
- for 1 hour at 350F. Yield: serves 6
