Berry Bonanza

Very Berry Blueberry Muffins

Ingredients

  • 2 cups all purpose flour 1 cup sugar 2 t. baking powder 1/2 t. salt 1/2 cup milk (I use 1%) 1/2 cup unsalted butter
  • melted & cooled 1 egg
  • slightly beaten 1 t. pure vanilla 2 cups blueberries (I use frozen but fresh is fine)

Directions

  • Preheat oven to 400*
  • Line 12 muffin cups or grease cups.
  • In a large mixing bowl combine the dry ingredients.
  • In another bowl, stir together the remaining ingredients except the
  • blueberries.
  • Make a well in center of dry ingredients and add the wet ingredients.
  • Stir just to combine.
  • Stir in blueberries by hand.
  • Spoon batter into prepared muffin cups (I always use an ice cream
  • scoop; it's easier and the muffins come out uniform).
  • Bake for 25-26 minutes.
  • Use a cake tester to check if done.
  • Cool 5 minutes before removing muffins from cups.
