Berry Bonanza

Very Berry Blueberry Muffins12 ServingsPrep: 10 min. Cook: 26 min.
Ingredients
- 2 cups all purpose flour
1 cup sugar
2 t. baking powder
1/2 t. salt
1/2 cup milk (I use 1%)
1/2 cup unsalted butter
- melted & cooled
1 egg
- slightly beaten
1 t. pure vanilla
2 cups blueberries (I use frozen but fresh is fine)
Directions
- Preheat oven to 400*
- Line 12 muffin cups or grease cups.
- In a large mixing bowl combine the dry ingredients.
- In another bowl, stir together the remaining ingredients except the
- blueberries.
- Make a well in center of dry ingredients and add the wet ingredients.
- Stir just to combine.
- Stir in blueberries by hand.
- Spoon batter into prepared muffin cups (I always use an ice cream
- scoop; it's easier and the muffins come out uniform).
- Bake for 25-26 minutes.
- Use a cake tester to check if done.
- Cool 5 minutes before removing muffins from cups.
