Baked Pizza Logs Recipe

Prep: 10 min. Cook: 15 min.

Yield: 8 Servings

Ingredients

1 pkg reduced fat mozzarella string cheese sticks
1 pkg refrigerated egg roll wrappers
1 pkg sliced pepperoni
2-3 Tbsp canola oil
sea salt to taste (optional)
red pepper flakes for garnish (optional)
freshly grated parmesan cheese for garnish (optional)
Marinara sauce for dipping (optional)

Directions

Preheat oven to 450 degrees. Line a heavy baking sheet with parchment paper.
Lay an egg roll wrapper flat on the counter. Line three pieces of pepperoni down the middle of the wrapper, overlapping slightly. Place a cheese stick on top of the pepperoni.
Fold the egg roll wrapper over the cheese, being careful to tuck in all sides, as you would wrap an actual egg roll.
Wet the end of the wrapper with a wet finger tip & fold over the rest of the log, pressing lightly to seal it shut.
Place logs on the baking sheet & brush each log on its top and sides with the canola oil. Sprinkle the tops of the logs with a mixture of the salt, red pepper flakes & parmesan.
Bake for 10 to 15 minutes, depending on how crisp you would like the wrappers to be. Allow to cool & serve with a side of marinara for dipping. Yield: serves 8
