This is a family size flapjack or pancake that has bacon cooked into it. I just made this for my family for the first time for breakfast, it was so good, we decided to make another one for dinner later that same day. This dish is super easy, delicious, and makes a big impression when presenting one big bacon pancake. The brown sugar adds some nice crunch on top as well as complements the salty bacon.

Bacon Upside Down Cake Recipe

Ingredients

  • 6 slices of Bacon
  • 1/4 cup light brown sugar packed
  • 2 cups pancake mix
  • 1 cup maple syrup or pancake syrup
  • 4 tbs butter (optional)

Directions

  • Preheat oven to 350 degrees. Put your bacon in your cast iron skillet or any skillet that can be used on the stove top and in a 350 degree oven. Depending on how thick your bacon is, it will take about 10 minutes on medium heat on the stove top until done and crispy. Turn bacon for even cooking. While bacon cooks prepare your pancake mix according to package directions. My box said to add 1 1/2 cups of water to 2 cups of mix and stir. When bacon is done turn off heat and sprinkle with brown sugar, do not drain fat unless you want too. You will want to spray the sides with a butter flavored non stick spray before pouring pancake batter in. Move to oven and bake for 12 to 15 minutes or until fluffy and done in the middle. Run a knife gently around the edge of pan to release pancake. Invert onto your serving dish. Give brown sugar a minute to drain off before lifting off skillet. Slice and serve with maple syrup, butter optional. Yield: serves 4

    Notes: 

    I used a lower sodium thick cut bacon but any kind would be great in this recipe.
  • I used Krusteaz Buttermilk Heart Healthy Pancake Mix (just add water)
  • If you can fit more bacon in the skillet and want to add more you can. You can also prepare more pancake mix if you like just leave room in skillet for it to fluff up as it bakes and adjust cooking time.
