Apple-Orange Raisin Spice Cake

Ingredients

  • 1 c. all-purpose flour 1 c. whole flour 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. ground cloves 1/2 tsp. nutmeg 1/3 c. dark raisins 1/2 c. chopped walnuts 3/4 c. frozen apple juice concentrate
  • thawed 3/4 c. sugar substitute 1/2 c. egg whites or liquid egg substitute 1 1/2 c. canola oil 1/2 c. + 1/2 tsp. orange juice concentrate
  • thawed 1 tsp. vanilla extarct 4 c. peeled
  • cored
  • sliced apples 1/3 c. orange marmalade

Directions

  • Preheat oven to 350 degrees. Generously coat 12-cup Bundt pan with
  • cooking spray.
  • In a medium bowl, sift together dry ingredients; add raisins and
  • nuts, tossing to coat.
  • In a large bowl, combine apple juice concentrate, sugar substitute,
  • oil, 1/2 cup orange juice and vanilla. Add flour mixture and stir
  • just until moistened. Fold in apples. Pour into prepared pan.
  • Bake 1 hour; cool 10 minutes in pan. Remove from pan to wire rack.
  • In small saucepan over low heat, heat marmalade until melted; add
  • remaining 1/2 tsp. orange juice stirring to blend. Drizzle sauce
  • over warm cake; cool completely. Yield: serves 0
