Apple-Orange Raisin Spice Cake

Ingredients
- 1 c. all-purpose flour
1 c. whole flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/3 c. dark raisins
1/2 c. chopped walnuts
3/4 c. frozen apple juice concentrate
- thawed
3/4 c. sugar substitute
1/2 c. egg whites or liquid egg substitute
1 1/2 c. canola oil
1/2 c. + 1/2 tsp. orange juice concentrate
- thawed
1 tsp. vanilla extarct
4 c. peeled
- cored
- sliced apples
1/3 c. orange marmalade
Directions
- Preheat oven to 350 degrees. Generously coat 12-cup Bundt pan with
- cooking spray.
- In a medium bowl, sift together dry ingredients; add raisins and
- nuts, tossing to coat.
- In a large bowl, combine apple juice concentrate, sugar substitute,
- oil, 1/2 cup orange juice and vanilla. Add flour mixture and stir
- just until moistened. Fold in apples. Pour into prepared pan.
- Bake 1 hour; cool 10 minutes in pan. Remove from pan to wire rack.

- In small saucepan over low heat, heat marmalade until melted; add
- remaining 1/2 tsp. orange juice stirring to blend. Drizzle sauce
- over warm cake; cool completely. Yield: serves 0
