Apple Cake

My husband Larry is the one that makes this cake. He received the recipe from a co-workers wife who use to make it and bring it into work. Larry would fill out a purchase order whenever he wanted Doris Nelson to make one!

Ingredients

  • 1 C. canola oil 2 C. sugar 2 eggs 2 C. flour 1 t. cinnamon 1 t. baking soda 1/2 t. salt 1 t. vanilla 1 C. chopped walnuts - toasted 4 C. diced
  • peeled apples - (3 apples)

Directions

  • Preheat oven to 350*.
  • Grease a 10x14 pan and set aside.
  • Combine sugar and oil and mix well. Add eggs one at a time and beat
  • well.
  • Combine dry ingredients and add to sugar mixture.
  • Pour batter into prepared pan.
  • Bake for 40-45 minutes.
  • When cooled frost with your choice of cream cheese frosting or
  • powdered sugar frosting. Sprinkle with toasted coconut. Yield:

Wine: Light-Bodied White Wine: Enjoy this recipe with a light-bodied white wine such as Sauvignon Blanc or Pinot Grigio.
