Apple Cake

My husband Larry is the one that makes this cake. He received the recipe from a co-workers wife who use to make it and bring it into work. Larry would fill out a purchase order whenever he wanted Doris Nelson to make one! 15 ServingsPrep: 30 min. Cook: 40 min.
Ingredients
- 1 C. canola oil
2 C. sugar
2 eggs
2 C. flour
1 t. cinnamon
1 t. baking soda
1/2 t. salt
1 t. vanilla
1 C. chopped walnuts - toasted
4 C. diced
- peeled apples - (3 apples)
Directions
- Preheat oven to 350*.
- Grease a 10x14 pan and set aside.
- Combine sugar and oil and mix well. Add eggs one at a time and beat
- well.
- Combine dry ingredients and add to sugar mixture.
- Pour batter into prepared pan.
- Bake for 40-45 minutes.
- When cooled frost with your choice of cream cheese frosting or
- powdered sugar frosting. Sprinkle with toasted coconut. Yield:
