Ingredients

  • 1 cup strong brewed coffee
  • 1/4 cup molasses
  • 6 fresh thyme sprigs
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon ground ginger
  • 4 bone-in pork loin chops (1 inch thick)

Directions

  • In a large bowl, combine the first nine ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate for at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook.
  • For glaze, place remaining coffee mixture in a small saucepan. Bring to a boil; cook until liquid is reduced to about 1/2 cup.
  • Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Spoon glaze over chops. Yield: 4 servings.

This was really great. My only substitutions were brown mustard for the dijon, and balsamic for the cider vinegar, and 1/2 tsp dried thyme, since that is what I had on hand. Very tasty!

These were quick, easy and so tasty! Very moist and flavorful. My husband who doesn't like coffee was skeptical, but he loved them. Even my two year old gobbled them up. Will definitely become a regular at our house.

I have made this recipe twice now and it will become a regular grilling/food item. My husband doesn't rave about much, but he raves about this one. The pork is tender enough to cut with a fork. Absolutely delicious!

One of the best I have ever tried. I did use pork tenderloin because that was what I had in the freezer. Absolutely delicious.

This was alright, sort of bland. Tasted better than it smelled.

This was surprising and delicious. The whole family liked it. Even my picky little 2 and 4-year-old had second helpings.

First time using coffee with meat...surprisingly,we enjoyed it! The only reason we didn't like it as much as possible was my own fault--I should have been more patient with the glaze because it was way too runny. Next time I'll make sure to cook it down a lot more so that it comes out the way it was intended.

This was a fun, new way to fix pork chops. My husband is critical of new recipes and he loved it. I will definitely make this recipe again!
