Coffee-Molasses Marinated Pork Chops Recipe
  • Prep: 10 min. + marinating Grill: 10 min.

Ingredients

  • 1 cup strong brewed coffee
  • 1/4 cup molasses
  • 6 fresh thyme sprigs
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon ground ginger
  • 4 bone-in pork loin chops (1 inch thick)

Directions

  • In a large bowl, combine the first nine ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate for at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook.
  • For glaze, place remaining coffee mixture in a small saucepan. Bring to a boil; cook until liquid is reduced to about 1/2 cup.
  • Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Spoon glaze over chops. Yield: 4 servings.

Nutritional Facts 1 pork chop with 2 tablespoons glaze equals 370 calories, 18 g fat (7 g saturated fat), 111 mg cholesterol, 415 mg sodium, 12 g carbohydrate, trace fiber, 36 g protein.

My husband and I loved this recipe! In fact I only had 2 pork chops but made the full recipe and saved enough to try on chicken breasts for tonight. I know this kind of marinade is good on steak and I like to experiment so I hope it works!

I've mad this several times throughout the year. This will give your pork the best flavor and is so tender. Best pork chop ever.

I agree with Vieux. I have made this numerous times, and it never fails to be absolutely delicious. I use good quality pork (Schwans) and follow the recipe pretty much verbatim. It is not overpowering, and definitely not bland. I was skeptical the first time i made it as i had never cooked using coffee before, but again, it was a wonderful recipe that my husbands loves. I made 6 chops tonight as we had company and he was sad that there was not extra left over.

It was good, but not as good as I expected. The coffee and molasses flavors were a little overpowering.

Don't listen to obxgoer or oaug2295. This is GOOD!. Use the mustard and vinegar of your choice and dried herbs if that's all you have but again this is GOOD!

This was really great. My only substitutions were brown mustard for the dijon, and balsamic for the cider vinegar, and 1/2 tsp dried thyme, since that is what I had on hand. Very tasty!

These were quick, easy and so tasty! Very moist and flavorful. My husband who doesn't like coffee was skeptical, but he loved them. Even my two year old gobbled them up. Will definitely become a regular at our house.

I have made this recipe twice now and it will become a regular grilling/food item. My husband doesn't rave about much, but he raves about this one. The pork is tender enough to cut with a fork. Absolutely delicious!

One of the best I have ever tried. I did use pork tenderloin because that was what I had in the freezer. Absolutely delicious.
