Ingredients

  • 1 cup strong brewed coffee
  • 1/4 cup molasses
  • 6 fresh thyme sprigs
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon ground ginger
  • 4 bone-in pork loin chops (1 inch thick)

Directions

  • In a large bowl, combine the first nine ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook.
  • For glaze, place remaining coffee mixture in a small saucepan. Bring to a boil; cook until liquid is reduced to about 1/2 cup.
  • Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Spoon glaze over chops. Yield: 4 servings.

I didn't have a grill available, so used the broiler. Fantastic! I couldn't believe how moist the chops were. Will definitely make this one again!!!

I thought the taste was only so-so.

Fantastic, and except for using 1 tsp. dried thyme instead of the sprigs, did everything else exactly as printed. We'll have this often. Quick and easy and with ingredients I always have on hand. Love it!

This is a great recipe the flavor was wonderful and the pork was very tender. It was easy to make and got a thumbs up by my husband and stepdaughter who is an excellent cook!

Very tasty! My husband was shocked to find out what was in the marinade/glaze...he dislikes molasses, but has asked me to make this again!

My husband and I loved this recipe! In fact I only had 2 pork chops but made the full recipe and saved enough to try on chicken breasts for tonight. I know this kind of marinade is good on steak and I like to experiment so I hope it works!

I've mad this several times throughout the year. This will give your pork the best flavor and is so tender. Best pork chop ever.

I agree with Vieux. I have made this numerous times, and it never fails to be absolutely delicious. I use good quality pork (Schwans) and follow the recipe pretty much verbatim. It is not overpowering, and definitely not bland. I was skeptical the first time i made it as i had never cooked using coffee before, but again, it was a wonderful recipe that my husbands loves. I made 6 chops tonight as we had company and he was sad that there was not extra left over.

It was good, but not as good as I expected. The coffee and molasses flavors were a little overpowering.

Don't listen to obxgoer or oaug2295. This is GOOD!. Use the mustard and vinegar of your choice and dried herbs if that's all you have but again this is GOOD!
