"I’m 11 years old, have six brothers and sisters, and we’re always looking for new ice cream recipes. I invented this for my sister’s birthday party, and everyone had compliments and wanted more," writes Marcus Dooley from Red Oak, Texas. "I’ve also tried it with peanut butter cookie dough and different flavored ice creams, but I like coffee the best."

Coffee Ice Cream Cookie Cups Recipe
  • Prep: 30 min. Bake: 15 min. + freezing
  • Yield: 12 Servings

Ingredients

  • 1 tube (16-1/2 ounces) refrigerated chocolate chip cookie dough
  • 2 cups coffee ice cream
  • Whipped cream and chocolate syrup
  • 1/3 cup English toffee bits or almond brickle chips

Directions

  • Let dough stand at room temperature for 5-10 minutes to soften. Cut into 12 slices; press onto the bottoms and up the sides of greased muffin cups.
  • Bake at 350° for 12-14 minutes or until golden brown. Cool slightly on a wire rack. Spoon ice cream into each cup. Cover and freeze for 1-2 hours or until firm.
  • Remove cups from pan. Garnish with whipped cream and chocolate syrup. Sprinkle with toffee bits. Yield: 12 servings.

Nutritional Facts 1 serving (1 each) equals 255 calories, 13 g fat (5 g saturated fat), 20 mg cholesterol, 131 mg sodium, 33 g carbohydrate, 1 g fiber, 2 g protein.

I can't believe that you're only 11 and you came up with this great recipe! That is AWESOME! And it tastes super yummy! I love, love, love my coffee and this is a nice coffee treat for the summer time. Everyone in our family LOVED it! Even my three year old who keeps asking for "Coffee Cookies" now! =0) Keep up the great work!

Kind of sad when someone rips into an 11 year old kid to justify thievery.

I don't know if anyone stole anyone else's recipe, but it's sick to think someone ought to be happy and thankful to be victimized. To the person who made that post, let me ask you this: If someone walked into your home and stole all your furniture, would YOU think it was a great thing and a "compliment"?

Lots of cooking blogs are having their content stolen too. Shame.

Anyway, this is a great recipe and one we'll go back to often.

People say the winner of the pillsbury contest, Sue, stole your recipe and won $1 million dollars, but no. Maybe it was the same idea, but she wasn't looking online for a recipe, she was going to the store, trying all she could to find a recipe! I am sorry if you think she stole your recipe. But, I am going to try out BOTH recipies and tell you if they taste the same, diffrences and more. But, you should be proud you made a winning recipe, and the winner used the same recipe! Great job! I rated this 1 star because I have not tried them yet, and people say she stole "your" recipe. Just wanted you to know.

Delicious! Had some trouble getting the cookie cups to look just right, but it tasted great! I used Phish food ice cream instead. Yum!

This looks wonderful!! My daughter who is 12 does not really go for cake for her birthday! She loves those iced coffee's so this would be a nice surprise for her! Thank you for the idea!! Chuzi
