I made these exactly as directed except for one thing. I had some coconut flavoring here from another recipe, so I used half vanilla and half coconut flavoring and the cookies turned out so delicious. This is definitely a keeper. I make about 40 - 50 dozen cookies each Christmas for gifts and entertaining. I've already earmarked this one for next Christmas.

This is by far the worst cookie recipe I have ever made in over 40 years of extensively baking. I thought the batter looked dry so rechecked to make sure I had everything right and I did. Put the cookies on the lightly greased sheets and in less than 6 minutes they were burned on the bottom! Threw that batch away! Washed the cookie sheets and this time just lightly sprayed them with baking spray. This batch was in 5 minutes, took them out and they looked ok but again the bottoms were burned! Gave a few to the dog and tasted one and it has NO flavor! Tossed them and the recipe! My cookie sheets are darn near ruined and they are pretty new. My oven is brand new this past October so its not the oven. Everything else I haved cooked or baked in it has come out fine. Can't believe Taste of Home has put their name on such an inferior recipe!

They really didn't have much of a coconut flavor to them. I am going to try and use coconut extract or even coconut milk in place of the water. Mine didn't come out looking like the picture. How do you get them too look like that? I did try the fork but, no where near to that. They looked like peanut butter cookies. They were good though. I am going to make them again and will be back to let everyone know how the nesxt batch was! Happy cooking everyone!

I like to experiment with recipes if I don't have certain ingredients. I didn't have butter so I used 1 cup of Butter Flavor Crisco. I used pineapple juice in place of the water and coconut extract in place of the vanilla. Oh my goodness, that made the cookies so much more delicious. I will make these a lot.
