Clams Creole Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped green onions, white part only
  • 1/2 chopped green bell peppers
  • 1/2 cup chopped celery
  • 2 teaspoons minced garlic
  • 1/4 cup white wine
  • 10 ounces canned diced red tomatoes with green chilies
  • 2 lb fresh Cherrystone or Littlenecks clams, scrubbed

Directions

  • In pot large enough to hold clams, heat oil over medium heat.
  • Add onions, green pepper, celery, and garlic. Cook, stirring until tender, about 5 minutes.
  • Stir in tomatoes, wine, and clams. Raise heat to medium-high. Cover pot.
  • Cook 5 to 8 minutes, or just until all of the clams have opened.
  • Remove from heat immediately. Serve.
