Clam Bisque Recipe

Ingredients

  • 1 tablespoon grated onion
  • 2 teaspoons unsalted butter
  • 1 tablespoon whole wheat flour
  • 1/2 teaspoons celery salt
  • 2 cups whole milk
  • 1 cup low sodium chicken broth
  • 6-1/2 ounces minced canned clams, undrained
  • 1 tablespoon chopped parsley
  • Pinch salt and pepper, optional

Directions

  • Melt butter in a medium pan and saute onion for 1 minute.
  • Add in flour and celery salt, cook for another minute.
  • Stir in milk and broth and bring to a boil. Continue boiling for 1 minute, stirring constantly.
  • Add in clams and liquid, cook over medium heat for 2-3 minutes.
  • Season with salt and pepper to taste (optional), and stir in parsley.
