Citrus Grilled Turkey Cutlets Recipe
  • Prep: 15 min. + marinating Grill: 5 min.

Ingredients

  • 2 tablespoons each lemon, lime and orange juices
  • 1 tablespoon minced fresh cilantro
  • 1 tablespoon canola oil
  • 1 tablespoon honey
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1 package (17.6 ounces) turkey breast cutlets

Directions

  • In a large resealable plastic bag, combine the juices, cilantro, oil, honey, garlic and seasonings; add turkey. Seal bag and turn to coat; refrigerate for 2 hours.
  • Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.
  • Grill turkey, covered, over medium heat or broil 4 in. from the heat for 2-4 minutes on each side or until no longer pink. Yield: 4 servings.

Nutritional Facts about 4 ounces cooked turkey equals 160 calories, 2 g fat (trace saturated fat), 77 mg cholesterol, 173 mg sodium, 3 g carbohydrate, trace fiber, 31 g protein. Diabetic Exchanges: 4 lean meat, 1/2 fat.
