A friend called one morning to see if I wanted company for coffee. I was going to make biscuits for breakfast but wanted something fancier to share. So I quickly turned those biscuits into hot cinnamon rolls. Was my friend impressed when she arrived to the sweet aroma!

Cinnamon Rolls in a Snap Recipe

Ingredients

  • 4-1/2 cups biscuit/baking mix
  • 1-1/3 cups milk
  • FILLING:
  • 2 tablespoons butter, softened
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/3 cup raisins, optional
  • ICING:
  • 2 cups confectioners' sugar
  • 2 tablespoons milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Directions

  • In a large bowl, combine biscuit mix and milk. Turn onto a floured surface; knead 8-10 times. Roll the dough into a 12-in. x 10-in. rectangle. Spread with butter. Combine the sugar, cinnamon and raisins if desired; sprinkle over butter.
  • Roll up from a long side; pinch seam to seal. Cut into 12 slices; place with cut side down on a large greased baking sheet.
  • Bake at 450° for 10-12 minutes or until golden brown. Meanwhile, combine the icing ingredients; spread over warm rolls. Serve warm. Yield: 1 dozen.

Nutritional Facts 1 serving (1 each) equals 330 calories, 12 g fat (5 g saturated fat), 14 mg cholesterol, 620 mg sodium, 53 g carbohydrate, 1 g fiber, 4 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

I have already made this recipe twice for my family and we love it! My boys are young so I halved the recipe to fit our needs and that worked great.

They were "okay"...this is what my husband said. I did not like the texture...it tasted too much like a biscuit and the dough was not easy to handle. They were very easy to make, but I think I will set aside the time the next time I make sweet rolls.

I loved how light and fluffy these rolls are, and the recipe is fast and easy. I also like how you can adjust the amount of butter that goes into them.

Were "okay"..

But I definitely like the texture of yeast cinnamon rolls better. The texture was to much like quick bread. Were very easy to make though!

I use this recipe often for company and just to bake with my Granddaughter. We mix the icing while the rolls bake, her attention last just long enough finish this recipe. We love it, minimal mess and great taste in a short amount of time. Bravo!

We liked these a lot. A bit thick, though, and you can halve the icing and still have plenty (at least for us!).
