“These cookies are also great with white chocolate instead of semi-sweet. For a simple topping, you can also use powdered sugar with peppermint candies.” —Barbara Estabrook, Rhinelander, Wisconsin

I followed the recipe, but used chocolate mint candy canes. My dough was very stiff, so I added a little peppermint Torani syrup (loosens up the dough & thought it would add more mint flavor). My cookies turned out more brownie like. Tasted good but very subtle cinnamon flavor & not what I expected. Didn't use the chocolate drizzle, the cookies were plenty sweet & chocolately. Will make again but will find the soft mint candies.

These cookies are awesome--I love the flavor combination of cinnamon, chocolate, and mint! I guess I made the cookies bigger than suggested because I only yielded about 2 dozen, but I think that made them chewier. Since I had fewer cookies, I had more chocolate sauce so I spread it like frosting on each. As for the soft peppermint candies, I found the Bob's brand at Target. The texture of the candy is like a hard dinner mint, which adds more of a subtle mint taste/texture than a candy cane would. I'm definitely adding these to my Christmas cookie list.

Delicious flavor combination!! I did have to cook them longer than the recipe suggests. I used the crushed candy canes, not sure what the recipe meant by soft peppermint candies. I would think something soft would melt into the batter?? The candy cans worked well, but because I did cook them a little longer they did start to melt also, but I liked the chewy effect it gave to the cookie. LOVED the cinnamon flavor with the chocolate.

To Suki: Try using parchment paper to line your cookie sheets instead of pan spray. Sometimes cookies spread out if there is a considerate amount of oils in the recipe such as butter, margarine or veg. oil so spraying the pan only adds more which causes cookies to spread. Adding more soda just may change texture and taste. Give it a whirl!

I think what they mean by soft peppermint candies are sold at WalMart or Walgreens...the ones I have are called Bob's Sweet Stripes, and they come in a plastic container and are individually wrapped.

I have a question--what are "soft peppermint candies?!" the candies in the picture look like crushed candy canes or the simply peppermint candies that are individually-wrapped round discs, but the recipe calls for "soft peppermint candies," and I don't know what those are. Can anyone help? Thanks!

What are the soft peppermint candies - where can you buy them?

fantabulous! I have now made these twice and both times were a huge success. They also make great cookie in a jar gifts with the chocolate and peppermint candies making colorful layers. FYI - I found I did not need hardly as much chocolate for drizzle and I added another 1/3 C peppermint candies to the cookies.

These were delicious, but mine came out much thinner than the ones in the picture. I'll try more baking soda next time.
