Cinnamon Apple Pancakes Recipe

Ingredients

  • 2 cups whole wheat flour
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 2 cups fat-free milk
  • 2 tablespoons honey
  • 1 tablespoon canola oil
  • 1 medium apple, chopped

Directions

  • In a large bowl, combine the flour, baking powder, cinnamon and salt. Combine the eggs, milk, honey and oil; stir into dry ingredients just until moistened. Stir in apple.
  • Pour batter by 1/3 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is golden brown. Yield: 12 pancakes.

Nutritional Facts 2 pancakes equals 246 calories, 5 g fat (1 g saturated fat), 73 mg cholesterol, 416 mg sodium, 43 g carbohydrate, 5 g fiber, 11 g protein. Diabetic Exchanges: 3 starch, 1/2 fat.

By far the blandest pancakes ever. No flavor.

We added butterscotch chips and all I can say is YUM!!

Great pancakes! My husband has been asking me to make these every weekend for the last 2 months! I do change up the flours, use flaxseed in place of the eggs, and use soy or almond milk. I also use applesauce instead of oil and add 1 teaspoon extra of apple spice. Wonderful!!

I felt the whole wheat flour was too much - I wish I would've used half white & half wheat. Regardless, the 4 teaspoons of baking powder made the batter very thick & foamy & hard to work with. I personally prefer thin pancakes, so this recipe was not for me. I also thought the taste was a bit bland.

These were so simple and delicious. For a fun twist I put caramel sauce out on the table with them and WOW!!

This is one of the very few TOH recipes that I haven't liked. I thought the pancakes were rather boring even after topping with syrup or jam.

I made these for lunch today and ate 2 hot with just a bit of syrup. I also ate one cold from the fridge without syrup=)
