Chocolate Pudding For One Recipe

Ingredients

  • 1-1/2 teaspoons cornstarch
  • Pinch salt
  • 1/2 cup milk
  • 1/4 cup semisweet chocolate chips
  • Whipped cream and baking cocoa, optional

Directions

  • In a 2-cup glass measuring cup, combine the cornstarch, salt and milk until smooth; add chocolate chips. Microwave, uncovered, on high for 45 seconds or until hot but not boiling; stir. Cook 20-30 seconds longer or until mixture just begins to boil; stir. Cool. Pour into a small bowl. If desired, top with whipped cream and sprinkle with baking cocoa. Yield: 1 serving.

I doubled the recipe and made it last night for a quick chocolate fix! Yum! It's good to have a tiny whisk on hand to mix the milk and cornstarch. I also used potato starch instead of corn and it worked perfectly. Enjoy!

I have made this recipe many, many times over the years, both with semisweet chocolate chips and milk chocolate ones. I wonder how it would be with butterscotch... or maybe a combination of butterscotch and chocolate? So simple to make and really satisfies a chocolate craving!
