Chocolate Cupcakes Recipe
  • Prep: 20 min. Bake: 15 min. + cooling

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1/2 cup buttermilk
  • Chocolate frosting and multi-colored sprinkles

Directions

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture alternately with water and buttermilk, beating well after each addition.
  • Fill paper-lined muffin cups two-thirds full. Bake at 375° for 12-15 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Frost cupcakes and decorate with sprinkles. Yield: 16 cupcakes.

Mixed reviews concerned me, but this is a great recipe. I think anyone who is disappointed with the chocolate taste might consider the brand of cocoa used.

Also, a little bit of strong coffee enhances almost any chocolate recipe.

From the picture, I expected this to be a rich chocolate taste. I was a little disappointed because it tastes more like something I could get from a box.

Loved the nice chocolate flavor of this recipe. Next time will make it and fill with Nutella for the extra chocolate flavor. I used a vanilla buttercream - Yummy!

Chocolate curls are made by using a vegetable peeler to thick "peel" on a bar of good chocolate. From the picture the frosting looks like a standard chocolate buttercream

the recipe is fine, but since the descriptions spoke of the chocolate curles being a showy way to display the cupcake, I expected to be told how to do the curls. When I have tried it in the past, I get chocolate sprinkles instead of curls, how do you get them to look like these?

This is the first time I've made chocolate cupcakes from scratch, so I'm not sure how these compare to other recipes, but I thought they were really good. Soft, fairly moist, lots of flavor. The batter did seem a bit thick, so I added an extra tablespoon of water. I also added a few chocolate chips to each cupcake. Will definitely make these again.
