I saw this recipe in a newspaper years ago and have changed it quite a bit. I make these muffins at least once a month and get many requests for the recipe.

Chocolate Chip Oatmeal Muffins Recipe

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup applesauce
  • 1 cup rolled oats
  • 1 cup (6 ounces) semisweet chocolate chips

Directions

  • In a large bowl, cream butter and sugar. Beat in egg. Combine dry ingredients; add alternately with applesauce to the creamed mixture. Stir in oats and chips. Fill greased or paper-lined muffin tins 3/4 full. Bake at 350° for 25 minutes. Yield: 12 muffins.

Nutritional Facts 1 serving (1 each) equals 261 calories, 13 g fat (7 g saturated fat), 38 mg cholesterol, 199 mg sodium, 36 g carbohydrate, 2 g fiber, 3 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. Love these- so do my kids! I added a tablespoon of flaxseed to make them even more healthy. I have made them for others and it has been a hit!!! Thank you.

Loved these. I also did one batch with apple pieces and cinnamon instead of choc chip.It was very good as well.

Oh these are SO GOOD! I doubled the recipe except for the chips (just put in 1 c.), and each muffin still had plenty of chips in them. I also did 1 c. wheat flour and 1 cup white to make them more healthy. MMMmmmm. Will be making these again and again.
