Chocolate Chip Mini-Muffins

Ingredients
- 1/2 cup sugar
- 1/4 cup shortening
- 1 egg
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup miniature semisweet chocolate chips

Directions
- In a large bowl, cream sugar and shortening until fluffy. Add egg,
- milk and vanilla; mix well. Combine dry ingredients. Gradually add
- to creamed mixture; mix well. Fold in chocolate chips. Spoon about 1
- tablespoon of batter into each greased or paper-lined mini-muffin
- cup. Bake at 375° for 10-13 minutes or until muffins test done.
- Cool in pan 10 minutes before removing to a wire rack. Yield: about
- 3 dozen.
