Chocolate Chip Mini-Muffins

Ingredients
- 1/2 cup sugar
- 1/4 cup shortening
- 1 egg
- 1/2 cup 2% milk
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup miniature semisweet chocolate chips
Directions
- In a large bowl, cream sugar and shortening until light and fluffy.
- Beat in egg; mix well. Beat in milk and vanilla. Combine the flour,
- baking soda, baking powder and salt; add to butter mixture just
- until combined. Fold in chocolate chips.
- Spoon about 1 tablespoon of batter into each greased or paper-lined
- mini-muffin cup. Bake at 375° for 10-13 minutes or until a
- toothpick inserted near the center comes out clean. Cool in pan 10
- minutes before removing to a wire rack. Serve warm. Yield: about 3
- dozen.
