Chocolate Almond Biscotti Recipe

Ingredients

  • 1/2 cup almonds, toasted and coarsely chopped, divided
  • 1/2 cup white all purpose flour
  • 1/3 cup whole wheat flour
  • 1/4 cup baking cocoa
  • 2 teaspoons instant coffee granules
  • 1/2 teaspoons baking soda
  • 1/8 teaspoons salt
  • 1/2 cup granulated SPLENDA® No Calorie Sweetener
  • 1 egg
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • Cooking spray

Directions

  • Preheat oven to 350°F.
  • Cover baking sheet with aluminum foil. Coat with cooking spray.
  • In food processor or blender, grind 1/4 cup almonds, all purpose flour, whole wheat flour, cocoa powder, instant coffee, baking soda, and salt, until almonds are ground. Transfer to mixing bowl.
  • In blender, process Splenda, egg, egg white, vanilla, and almond extract for 2 minutes.
  • Add egg mixture to mixing bowl with dry ingredients. Mix in 1/4 cup almonds. Blend well
  • Divide batter in half. Form two 5-inch logs. Place on baking sheet.
  • Bake 15 minutes. Remove. Let cool for at least 10 minutes.
  • Reduce oven to 300°F.
  • Place biscotti on cutting board. Cut each log into ten 1/2 -inch diagonal slices.
  • Return slices to baking sheet. Bake 20 minutes.
  • Remove from oven. Cool. Store in airtight container.

This is a wonderful cookie. I don't use Splenda so I replaced it with real sugar. It may increase the calorie count, but for me it's worth it. I also added 1/2 cup of dried cherries. Awesome flavor!
